I'm glad you found this site of use. I think you hit on the most important aspect of doing it yourself. Shooting your animal well, aging it, butchering it yourself and cooking it just as perfectly as it can be is to fully experience the hunt the way it should be. No doubt you will find this year's venison the best you have ever eaten.
